Versate la farina in una ciotola capiente e unite l\u2019acqua poco per volta, mescolando. Aggiungete il sale e l\u2019olio solo alla fine, quindi impastate fino a ottenere una massa liscia e omogenea.<\/p>\n<p>Coprite e lasciate riposare per 30 minuti, poi fate un paio di pieghe in ciotola a distanza di 20 minuti l\u2019una dall\u2019altra. Trasferite l\u2019impasto in un contenitore leggermente oliato, coprite e lasciate maturare in frigorifero per 18\u201324 ore. Togliete l\u2019impasto dal frigo un paio d\u2019ore prima di utilizzarlo, quindi dividetelo in due panetti.<\/p>\n<p>Lasciate riposare i panetti a temperatura ambiente per almeno 2 ore.<\/p>\n<p>Su un piano leggermente infarinato, stendete ogni panetto con le mani formando un disco da circa 28 cm di diametro.<\/p>\n<p>Affettate la mela Golden Delicious di Mela Alto Adige IGP a fettine sottili, senza sbucciarla.
